Whole Wheat Low Calorie Vegan Cake Recipe to Celebrate your Special Day



If you're looking for a healthier Cake to enjoy with friends and family, this recipe is just for you! This Moist and delicious wholesome Cake is made without Egg and is dairy free. The low Calorie glaze is made with Stevia. You can use either Lemon extract or Vanilla extract. The texture is super light and the homemade Sprinkles is made from dried Fruits and Nuts which you can easily prepare at home,


INGREDIENTS

Cake Batter

  • 3 cups All Purpose Flour

  • 2 cups White Whole-Wheat Flour

  • 1 cup Coconut Milk

  • 250g plant based Butter at room temperature

  • 3/4 cup Coconut Sugar

  • Flax Eggs

  • 2 tbsp Baking Powder

  • 1 tbsp Lemon Zest

  • 2 tbsp Lemon Extract

  • 1/tsp Ground Cinnamon

  • 1/2 tsp Salt

STEVIA GLAZE

  • 1 cup Stevia

  • 1 tbsp Cornstarch

  • 2 tbsp Coconut Milk

  • 2 tbsp Lemon Extract or Vanilla Extract

INSTRUCTIONS

Get the Oven ready: Preheat your Oven to 350° F


Make Flax Egg: Combine 2 tbsp of Flax-meal with 7 tbsp of Coconut Milk. Stir to combine and allow it to sit for 15 minutes.


Homemade Healthy Sprinkles:

  • I made my Sprinkles with organic dried fruits and Nuts. I choose the fruits that are sweet but not too strong to chew. I avoided over-dried fruits like Raisins. I used chewy Coconut Chips that I sliced into tiny bite sizes.

  • Dried Apricots are good for this because even though they are dried, they are still soft and smooth to chew. I added roasted store bought chopped Hazelnuts. They tastes so good and are perfect to make Sprinkles at home.

  • You can add other varieties of dried fruits to give your Sprinkles a more beautiful outlook, Most importantly the size is what makes them look like real Sprinkles so slice and chop the fruits and nuts into tiny beautiful sizes.


Prepare the Cake Batter:

  1. Whisk the Flax egg with Coconut Sugar, add the Plant based Butter and the other wet ingredients.

  2. Whisk until smooth and set aside.

  3. Mix the dry ingredients separately in a large Bowl and combine together with the wet ingredients.

  4. Mix until smooth but don't over-mix.

  5. Divide Batter into 2 Cake Pans (I used 8" and 9" Spring-form Pans) Bake for 45 to 50 minutes or until toothpick inserted into the middle comes out clean (baking time vary depending on your Oven)

  6. Allow the Cake to cool completely at room temperature.


Stevia Glaze:

  • Grind 1 cup of stevia until powdered and combine with 1 tbsp of Cornstarch.

  • Add other ingredients for the glaze and whisk together.

  • You can add Lemon Extract or Vanilla Extract but Lemon Extract will give it a tangy flavor unlike the Vanilla Extract,

  • Pour the glaze immediately on the Cake and spread evenly. Decorate the Cake immediately with your homemade fruit sprinkles.

  • Put the Cake in the Fridge uncovered for 35 - 40 minutes before serving to harden the glaze.

Prep Time 35 minutes

Baking Time 45 minutes

Total Time 1 hour 20 minutes
