The Easiest Mango Bread Recipe | Homemade Plant-Based Bread

This homemade fruit bread recipe is perfect for those looking for a yeast-free bread alternative.


INGREDIENTS

3 1/2 cups of cake flour or all purpose flour

4 teaspoons of baking powder

1/2 teaspoon of baking soda

1 medium ripe mango

1/2 cup of diced mangoes

1 cup of unsweetened homemade applesauce

1/2 teaspoon of salt

3 teaspoons of freshly grated lemon zest

1/2 cup of coconut milk

1/2 cup of organic cane sugar



INSTRUCTIONS

Peel, cut and dice the ripe mango on a cutting board and mix them until smooth with a blender.


Combine and sift the dry mixture directly into a mixing bowl.


Combine the mango puree with the dry ingredients and add all the wet ingredients that you're using.


Whisk with Electric Mixer or Hand mixer until the mixture is light but don't over-mix.

Grease a medium loaf pan lightly with any plant based butter and line the pan bottom with parchment paper.


You can lightly flour the sides of the greased pan with 1 tbsp of flour (just spread the flour into the Pan and hit the bottom of the pan to shake off drifts of flour that you added to the pan)

Pour Batter into the prepared loaf Pan.

Cut out some stripes from the mango and use them as topping.


Bake it in a preheated oven for 35 - 40 minutes or until a toothpick inserted into the middle comes out clean (baking time varies so keep eye on your bread to prevent much browning.


I recommend eating your bread within 48 hours after making it for the best. Bread or cake with fruits should not be stored for a long time.
