SALAD INGREDIENTS
1 cup of cooked brown rice
1 medium avocado
1 cup of fresh chopped spinach
1/2 cup of mixed sweet peppers
1/2 cup of chopped green onions
1/2 cup of diced avocados
1/2 cup of canned corn
1/2 cup of canned red beans
1/4 - 1/2 cup of chopped basil leaves
AVOCADO DRESSING #avocadodressing
2 cups of ripe avocados
1 teaspoon of chopped garlic
1/4 cup of extra virgin oil
1/2 cup of water
1/4 teaspoon of salt
1/4 teaspoon of black pepper
3 tablespoons of lemon juice
INSTRUCTIONS
Wash, slice and chop the Veggies.
Peel and dice the avocados
Combine the ingredients together.
Mix the ingredients for the dressing separately.
Toss the salad with the avocado dressing and serve Immediately.
