Pineapple Mini Pies with No Added Sugar Recipe for a Perfect Holiday
These Yummy Mini Pies are filled with scrumptious Pineapple filling. Enjoy these delicious Pies for your tea party. They are the perfect Snacks on the go! soft and chewy with Lemon flavor. I added some tablespoons of the filling to the Crust and the result is marvelous. These perfect holiday sweet Pies are made with no added Sugar.
3 cups All Purpose Flour
6 cups chopped Pineapple (1 1/2 medium fresh Pineapple)
1 tsp Baking Soda
1/4 tsp Salt
2 tsp Lemon Extract
1 tbsp Lemon Zest
1/4 tsp Cinnamon
1 cup melted Plant Based Butter
Peel and chop the Pineapple and put them into a Blender.
Blend until smooth and pour them into a Saucepan.
Stir in Lemon Extract, Lemon Zest and just 1/4 tsp of ground Cinnamon
Stir continuously over a medium heat until the puree is reduced and thick.
Transfer the filling into a bowl and allow to cool at room temperature for 20 minutes.
Cover the bowl tightly and chill the filling in the Refrigerator for 30 minutes
Preheat the Oven to 350° F
Combine the dry ingredients together with a Mixer.
Add Butter and 6 tbsp of the prepared Pineapple filling.
Add Lemon Extract or any other flavor of choice.
Mix until well combined.
Allow Dough to rest in the Fridge for 20 minutes.
Flour your work surface and roll out the Dough
Grease your Baking Tray with baking spray and place a parchment paper into the tray.
Cut out some round shapes from the Dough, they should be the same size,
Add 1-2 tablespoons of the filling to a mini round Crust, cover with another round shaped mini Crust, repeat for the others and seal the edges,
Put the pies in the baking tray.
Bake in a preheated Oven for 20-25 minutes or until firm to touch and the bottom is lightly browned (baking time vary so keep eye on your mini pies to prevent much browning.
Allow the Pies to cool completely and store them at room temperature in an air tight container. Enjoy the pies within 3 days.
