Nutritious Chia Blueberry Pie Recipe For A Healthy Lifestyle
I love this best ever homemade Pie that you can enjoy as a healthy dessert or as side dish with Custard or fruit Ice Cream. This Pie is dairy free with no Egg, The Crust is made with Chia Seeds and is super yummy and the filling is packed with nutritious Blueberry Mint Filling sweetened with Maple Syrup in a flaky No Sugar nourishing Chia Crust.
It's the perfect dessert to satisfy your craving in a healthy way and a simple Pie that you can easily make at home.
3 cups All Purpose Flour
1 tsp Baking Powder
1)2 tsp Salt
1/4 cup Chia Seeds
1/2 tsp Ground Nutmeg
250g Plant based Butter
4-5 tbsp of cold Water (you can add more if necessary)
500g fresh Blueberries
1 tbsp Lemon Zest
1/4 cup chopped Mint Leaves
2 tbsp Cornstarch
2 tbsp melted Plant based Butter
2 tbsp Maple Syrup
Preheat your Oven to 350° F
Combine all the ingredients for the Crust starting with the dry ingredients. Mix together with a food mixer but you can also mix with hands. Feel the texture and add more water only if it is necessary. Always start with 1 tablespoon of water at a time. You can still add 1 tbsp of flour if the Dough is sticky.
Divide the Dough into 2 portions. Put the Dough into 2 Bowls, cover the Bowls tightly and put in the Fridge to rest for 45 minutes.
Roll out one portion of the Dough after 45 minutes. Place the Crust into a 9 inch non stick Tart Pan or a similar Pan. You can grease the Pan lightly with Oil or Baking Spray. Place the Crust into the prepared Pan.
Wash the fresh Blueberries and combine with the other ingredients. Stir to combine and transfer the filling into the Crust. Roll out the second Dough portion and cut out some Dough stripes. Use the stripes to cover the Crust. Roll out the leftover Dough and cut out some shapes to decorate the Pie. Put the Pie into the preheated Oven and bake for 45 minutes or until golden brown (baking time vary)
Allow to cool for at least 4 hours and enjoy your Pie.
Keep the baked Pie at room temperature for 2 days and wrap any leftover loosely after 2 days with foil and keep it in the Fridge for another 2 days but I love enjoying my Pie within 24 hours after making it. Sure, the freshness and taste of a freshly baked Pie is unbeatable!
