Immune Boosting Arugula Salad You Must Eat To Stay Fit


I love to stay healthy with a perfect Salad and adding arugula leaves to my diet plan will not just help to keep me fit but gives me the perfect flavor and taste that will increase the appetite of anyone to eat arugula salad every week.

Arugula leaves known as rocket leaves with tangy peppery flavor are a good choice for anyone that'll love to eat a fresh salad made with nutritious ingredients. These Nutrient dense fresh arugula leaves are high in fiber and low in calories and remains one of the most healthy leafy greens to add to your salad. Arugula is perfect for weight watchers and may also help to lower blood pressure.

SALAD INGREDIENTS

2 cups Arugula leaves

1/2 cup chopped Apples

1/2 cup Cauliflower (steamed for 2 minutes in a microwave)

1/2 cup Parsley leaves

1/2 cup fresh Blueberries

1/4 cup Pecan nuts

Blueberries with sweet taste are very high in antioxidants and low in calories.

Cauliflower with mild nutty flavor is high in fiber, B-vitamins and may support hormonal balance. I prefer chopping and steaming the florets for about 2 - 3 minutes before adding them to my salad.

Parsley leaves are rich in antioxidants and one of my favorites leafy greens that helps to enhance the flavor of every salad

I love the sour taste and crispy skin of Green Apples. They are rich in fiber, tastes perfect in almost every salad and may help to ease constipation.


LEMON VINAIGRETTE

1/2 cup freshly squeezed Lemon Juice

1/2 cup Extra Virgin Olive Oil

1/4 teaspoon ground Ginger

1/4 teaspoon Salt

2 teaspoons Yellow Mustard (not Dijon)

1/4 teaspoon Black Pepper

2 teaspoons Maple Syrup (optional)

INSTRUCTIONS

  1. Whisk together the ingredients for the lemon vinaigrette and set aside.

  2. In a large bowl combine the washed leafy greens and fruits. This combination is necessary for a perfect flavor, good taste and more importantly for immune system boost

  3. Drizzle the lemon vinaigrette over the salad and mix until combined.

  4. Serve the salad immediately.
