Mango Strawberry Pie You'll Love To Eat


I just can't stop making this delicious pie every weekend! I love Strawberries and this popular fruit remains one of the best fruits that you can enjoy any time of the day. Adding sugar is not necessary if your strawberries are fresh with natural sweetness. I choose the small or medium size strawberries because they are usually sweeter than the larger ones. This Strawberry pie is made with a blend of orange juice so the filling is enriched with natural sweetness and flavor without added sugar.

The incredibly delicious mango crust is made with pure mango smoothie without added sugar and the taste is perfect.

MANGO CRUST INGREDIENTS

2 and 1/2 cups All Purpose Flour

1 medium mango

1/2 cup plant based butter

1/4 teaspoon Salt

1/4 teaspoon ground Nutmeg

1 teaspoon vanilla extract


STRAWBERRY FILLING

4 cups diced Strawberries

2 teaspoons Vanilla Extract

1/2 teaspoon ground Nutmeg

2 - 3 tablespoons Cornstarch

3/4 cup freshly squeezed orange juice

1 -2 cup fresh Strawberries for topping

How To Make Mango Crust

  • Preheat your oven to 325 degrees.

  • Chop the mango and transfer the chopped mangoes into a blender.

  • Blend until smooth and pour the fresh smoothie into a medium bowl, you need just 1/2 cup of the this pure smoothie.

  • Combine the ingredients for the crust together with the pure mango smoothie and mix until well combined and smooth without sticking to the fingers when touched.

  • Roll out the dough on a floured surface and transfer to a 10-inch tart pan with removable bottom preferably. Remove any excess dough, poke holes on the crust to allow steam to escape while baking.

  • Bake in the preheated oven for 20 25 minutes or until golden browned and allow the crust to cool at room temperature.

How To Make Strawberry Filling

  • Transfer 3 cups of the diced Strawberries into a Saucepan and pour 1/4 cup of fresh orange juice into the saucepan. Boil over a medium heat and stir continuously to combine.

  • Dissolve the cornstarch with half cup of orange juice and stir in the mixture into strawberry sauce. Stir to combine, add vanilla extract, ground nutmeg with the other ingredients and lower the heat for 2 minutes.

  • Turn off the heat and add 1 cup of fresh strawberries to the sauce. Stir and allow to cool completely at room temperature.

  • Pour the filling into the pie shell and top with fresh strawberries. Cover and keep the pie in the refrigerator for at least 6 hours before serving

Cooking Time 25 minutes

Total Time 45 minutes
