Vegan Oatmeal Carrot Cake Bread Recipe with No Added Sugar You'll Love to Try



I love this special loaf made without added Sugar. This is one of my best No added Sugar Loaf that you can enjoy as a Breakfast Bread or Tea Time Cake. The texture is soft and rich and the taste is more like a Cake baked in a loaf pan. This simple and rich Vegan Oatmeal Cake Bread is made with homemade Oat flour, fresh Carrots, Chia Seeds and other wholesome ingredients. It's perfectly soft, rich and delicious, packed with nutrients and a simple homemade loaf without added Sugar that is incredibly sweet to bake at home. The recipe is simple and the result is mouth watering!


INGREDIENTS

  • 1 1/2 cups Oatmeal Flour

  • 1 cup All Purpose Flour

  • 2 tsp Baking Powder

  • 1/4 tsp Salt

  • 1/4 tsp Baking Soda

  • 1 tsp Ground Nutmeg

  • 1 tbsp Chia Seeds

  • 4 tbsp Coconut Milk

  • 1/2 cup Soy Milk

  • 1/2 cup Vegetable Oil

  • 2 cups grated Carrots (about 3 medium Carrots)

  • 2 tbsp Lemon Juice

  • 1/4 cup chopped dates

  • 1/2 cup Raisins


INSTRUCTIONS

  1. Chia Egg: Mix 1 tbsp of Chia Seeds with 4 tbsp of Coconut Milk.

  2. Stir and allow it to sit for 15 minutes.

  3. Preheat the Oven to 350° F

  4. Combine the Chia Egg with the wet ingredients and whisk until smooth.

  5. In a separate Bowl mix all the dry ingredients and sift to remove any lumps.

  6. Combine all the ingredients with a hand mixer until smooth and set aside.

  7. Grease a Baking Loaf Pan with Plant Based Butter, Vegetable Oil or Baking Spray.

  8. Place a Parchment Paper inside the Pan and flour the Pan with 1 tsp of Flour.

  9. Pour the Batter into the Pan and spread instant Oat on top of the Batter.

  10. Top with chopped Carrots and bake for 35 to 40 minutes.

  11. Allow it to cool at room temperature before cutting, this can take up to 5 hours.

STORAGE

Store the Cake Bread in an airtight Container in a cool dry place and enjoy within 2 to 3 days
