INGREDIENTS
2 cups of chopped arugula
1/4 cup of chopped Green onions
I cup of chopped sweet peppers
I cup of canned sweet corn
2 cups of diced avocados
1 cup of sliced tomatoes
I cup of roasted and spiced chickpeas
2 cups of chopped lettuce
I cup of diced plant based Feta Cheese
Creamy Yogurt Dressing Ingredients
½ cup Greek yogurt
1–2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey
1 small garlic clove, minced
Salt, to taste
Black pepper, to taste
1 tablespoon fresh chopped herbs (parsley, dill, or chives)
Optional:
1 teaspoon Dijon mustard for extra flavor
A little water to thin the dressing if needed

Creamy Avocado Dressing Ingredients
1 ripe avocado
2 tablespoons olive oil
2 tablespoons lime juice or lemon juice
1 small garlic clove
2–3 tablespoons Greek yogurt or water
Salt, to taste
Black pepper, to taste
Optional:
Fresh cilantro or parsley
1 teaspoon honey for slight sweetness
½ teaspoon chili flakes for a little heat
Extra water to thin the dressing to your desired consistency.
