APPLE LUNCH SALAD with LIME DRESSING INGREDIENTS

  • 8 colorful apples (thinly sliced)

  • 3 fresh kiwis (peeled and diced)

  • 1 medium orange & lemon (peeled and chopped)

  • 2 medium fresh pears (diced)

  • 1/2 cup of mint leaves (chopped)

LIME DRESSING

  • 3 tablespoons of freshly squeezed lime juice

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of salt

  • 1 teaspoon of lime zest

  • 6 tablespoons of extra virgin olive oil

  • 1 tablespoon of maple syrup (optional) and 2 tablespoons of apple cider vinegar

  5. Cover the bowl and keep in the fridge until ready to serve.
