I love this delicious Salad that is bursting with vibrant colors and flavor! This simple but delicious Vegan Greek Salad with homemade Vegan Feta Cheese is one of the easiest Salad recipes that you can always turn to whenever you're eager to surprise your guests and friends with a delicious Salad Bowl. This Plant-Based Salad is tossed with a simple and delicious Apple Cider Vinegar Dressing made with yellow Mustard (not Dijon) and other healthy ingredients.

This simple and a healthy Salad is a fresh Salad that you can easily make at home. It's so delicious, you can add more leafy greens to your Salad. This Salad can be enjoyed as a healthy satisfying meal on its own or a perfect accompaniment to main dish.

  • 1 cup Cucumber slices.

  • 1 cup Tomato slices.

  • 1 cup mixed red sweet Pepper, yellow sweet Pepper and Green sweet Pepper ring slices

  • 1/2 cup chopped mixed colorful sweet Peppers.

  • 1/4 cup Green Olives.

  • 1/4 cup Black Olives.

  • Red and Green Lettuce just for decoration (optional).

  • Arugula Leaves.

  • 180g Vegan Feta Cheese.

Ingredients for making Vegan Feta Cheese:

  • 18og Tofu

  • 100ml Extra Virgin Olive Oil

  • 1/4 cup Water

  • 2 tbsp Lemon Juice

  • 1 tbsp Lemon Zest

  • 1/4 tsp Garlic Powder

  • 1 tsp Thyme

  • 2 tbsp Apple Cider Vinegar

Apple Cider Vinegar Salad Dressing:

  • 3 tbsp Extra Virgin Olive Oil

  • 2 tbsp Apple Cider Vinegar

  • 1/4 tsp Salt

  • 1/4 tsp Ground Black Pepper

  • 1/2 tsp Yellow Mustard (not Dijon)

  • 1 tsp Lemon Juice


  1. Dice the Tofu in cubes and combine with the other ingredients for Vegan Feta Cheese.

  2. Cover and shake to mix well in a Jar.

  3. Allow to rest for at least 3 hours in the Fridge.

  4. Wash, slice and chop the Veggies (watch Video).

  5. Combine the Veggies.

  6. Top your Salad with the homemade Feta Cheese.

  7. Combine the ingredients for Salad Dressing and Pour Over your Salad.

  8. You can serve your Salad immediately or allow the Salad to rest for some minutes in the Fridge before serving.
