Plantbased Yogurt Raspberry Cake For Your Special Day

The Celebration of your day can never be complete without a perfect cake to please your guest!. This delicious homemade yogurt cake with raspberries is a perfect cake to celebrate with on your special day. It is filled with yummy raspberries and bursting with rich flavor.

Fresh Raspberries are one of the best tender fruits to bake with. They are nutrient dense with intense sweet tart flavor, a good source of vitamin c and perfect for baking. Adding 1 to 2 tablespoons of flour to this awesome fruit before baking will prevent them from sinking down inside the cake after baking.


CAKE INGREDIENTS

2 1/2 cups all purpose flour

3 teaspoons baking powder

1/4 teaspoon salt

1 cup soy milk

2 teaspoons vanilla extract

3/4 cup plant based butter

1/2 cup ground hazelnuts

1/2 cup unsweetened applesauce

1/2 cup maple syrup

1/4 cup ground flax seed

1 1/2 cups raspberries


YOGURT GLAZE (optional)

1/4 cup plant based yogurt

1/4 - 1/2 cup powdered erythritol or any other powdered sweetener

1 teaspoon vanilla extract

Baking with Plant based Yogurt Or Vegan Yogurt helps to add moisture to baked goods. You can use almond yogurt, coconut yogurt cashew yogurt or any other dairy free yogurt.

Maple Syrup add fewer calories, contains some nutrients with natural sweetness that is perfect for baked goods.


INSTRUCTIONS

  1. Preheat your oven to 350° F and in a large bowl combine flour, salt, baking powder and ground hazelnuts together and set aside.

  2. Whisk the applesauce with the ground flax-seed together, then add oil, maple syrup, and melted butter, Add the soy milk gradually while adding the mixed dry ingredients.

  3. Mix until combined but don't over mix. rub butter generously into a 10 inch bundt cake pan, add about 1 tablespoon of white flour into the pan, turn pan upside down to remove excess flour and pour the batter into the pan, tap pan lightly to level the batter.

  4. Place pan into the middle of your preheated oven and bake for 40 to 45 minutes or until a toothpick inserted into the middle comes out clean.

  5. Allow cake to cool completely at room temperature.

  6. Whisk together the ingredients for the yogurt glaze and pour over your cake (optional)

  7. Decorate the cake with fresh raspberries (optional) and enjoy fresh or refrigerate with an airtight cake container and serve within 2 days.
