Veggie Watermelon Salad is incredibly rich and delicious! This amazing Salad is a healthy mix of Watermelon with selected Veggies and some of the most nutritious fruits that are rich in vitamins and minerals. I usually add red Cabbage to this awesome Salad that is special for dinner or lunch. Red Cabbage is a good source of vitamin k and high in fiber and other essential vitamins making it easier to digest so combining it with the other ingredients that I used for this salad is never a mistake. The combination is wonderful and filling!
Homemade Pineapple Vinaigrette dressing is perfect for this Salad.
It is so easy to prepare within 10 minutes and the taste is unbeatable!
INGREDIENTS
1/2 cup Red Cabbage (can be reduced to just 1/4 cup)
1/2 cup chopped Celery
Pineapple slices for topping
1/2 cup chopped Pineapple
1/3 cup chopped Apples
1 cup chopped Watermelon
Pineapple Vinaigrette Dressing
1 teaspoon Yellow Mustard
4 tablespoons Extra Virgin Olive Oil
2 tablespoons Maple Syrup (can be reduced to just 1 tbsp)
3 tablespoons Apple Cider Vinegar
1/2 cup chopped pineapple for the puree (blend until smooth with a fruit mixer)
DIRECTIONS
Mash or blend 1/2 cup chopped Pineapple until smooth preferably with the Blender (You need just 3 tbsp for the vinaigrette dressing).
Wash, slice, and chop the Veggies and Fruits in different shapes and sizes and set aside.
Combine 3 tbsp of the fresh pineapple puree with the other ingredients for the Vinaigrette dressing, whisk until smooth and set aside.
Combine the prepared fresh salad ingredients in a large bowl and toss together with the Pineapple Vinaigrette Dressing.
Serve immediately or refrigerate and serve later.
