Nutrient dense Blueberry Salad with Fresh Pineapple Vinaigrette Recipe you'll actually want to make

A special Salad that is great for Lunch or dinner and loaded with nutrients and flavors! This delicious Blueberry Fruit salad is bursting with healthy ingredients and can be enjoyed as a side dish or main meal. This super fresh and healthy Salad is loaded with fresh Blueberries and nutritious ingredients and topped with leafy greens, Apple slices and Nuts.

To make this easy Blueberry Salad, you'll need fresh Blueberries, preferably organic Blueberries are the best.

Firstly, you'll need to make Pineapple Vinaigrette. This special Salad Dressing is made with fresh ripe Pineapple which is perfectly sweet and the main ingredient in this Vinaigrette Dressing.


  • 1/2 cup chopped Red Apples

  • 3 cups fresh Blueberries

  • 1/4 cups Pecans

  • 1/4 cups Walnuts

  • 1/4 cup Raisins

  • 1/4 cup chopped dried Apricots

  • Half of 1 fresh Lemon

  • Half of 1 fresh Lime

  • 20g fresh baby Spinach

  • 70g Rocket Leaves

  • 1 cup sliced red Apples for topping


  • 1/2 cup chopped sweet ripe Pineapple

  • 2 tbsp Extra Virgin Olive Oil

  • 2 tsp Red Wine Vinegar

  • 1/8 tsp Black Pepper

  • 1/4 tsp Salt

  • 2 tsp Maple Syrup


  1. Firstly, combine the ingredients for the Pineapple Vinaigrette Dressing in a Blender.

  2. Blend until smooth and set aside

  3. Wash the leafy greens and prepare the other ingredients, you can cut them in any sizes you like.

  4. Combine half of the Salad ingredients in a large Bowl.

  5. Sprinkle the Salad with Lemon and Lime Juice.

  6. Mix the Salad with half of the Vinaigrette Dressing.

  7. Top and decorate the Salad with the remaining ingredients.

  8. Drizzle the remaining Dressing onto the Salad just before serving, mix again and enjoy.
