Make eating colorful with this perfect dinner Salad that will brighten up your week. This fresh and filling nutrient dense Salad is with beneficial vitamins and minerals to boost your immune system. I love this satisfying rich Salad for dinner, The taste is wonderful!


Apple Cider Vinaigrette: I recommend this healthy Salad dressing for this special Salad not minding the fact that you can simply buy any Salad dressing of choice and add to your Salad but homemade Salad dressing is simply the best, at least you can spice up your Salad and use healthier ingredients to make your Salad. This is especially important if you're trying to avoid calorie filled Salad. This Salad dressing is a mix of olive oil, yellow mustard, lemon juice, apple cider vinegar and other healthier ingredients. The quantities can be adjusted to suit you. I added more lemon juice, less olive oil and just 1 teaspoon of maple syrup and the taste is perfect.


Celery: Adding this low calorie snack with antioxidants to your Salad is necessary. Celery has range of many health benefits to boost your health.


Spinach: This leafy green that is rich in vitamin E and magnesium is my favorite immune booster.


Arugula or Salad Rocket: Incorporating this edible peppery vegetable packed with vitamins, minerals and antioxidants into this rich Salad will help to raise the level of body immunity.


Blueberries: This nutritious super-food that is low in calories and rich in antioxidant is special and perfect for this Salad.


FRESH SALAD INGREDIENTS

1/2 cup chopped Celery

1 cup Lettuce

1/ cup chopped Apples

1/2 cup steamed Cauliflower

1/2 cup Spinach

1/2 cup Chickpeas

1/2 cup fresh Blueberries

1/3 cup Red Sweet Pepper

1/3 cup Yellow Sweet Pepper

1/4 cup fresh Arugula


APPLE CIDER VINAIGRETTE

1/4 - 1/2 cup Extra Virgin Olive Oil (I added just 1/4 cup)

1/4 cup Apple Cider Vinegar

2 tsp Yellow Mustard

1 - 2 tbsp of Lemon Juice

1 tsp Maple Syrup

1/4 tsp Salt

1/8 - 1/4 tsp Black Pepper (optional- I added just 1/4 tsp)


INSTRUCTIONS

  1. Combine the ingredients for the Apple Cider Vinaigrette together,

  2. Stir or shake until well combined and set aside.

  3. In a large Bowl, combine half of the fresh Salad ingredients together.

  4. Sprinkle half of the Vinaigrette dressing and stir together.

  5. Add the remaining half of the fresh ingredients and Sprinkle the Apple Cider Vinaigrette again on top of the Salad and serve immediately.
