I love this nutritious Mango Bread that omitted most of the regular ingredients but is even more tastier and healthier. How then can we enjoy a healthy lifestyle without trying out some Low Calorie Nutritious baked goods. Baking this delicious Nutrient-Dense Bread with a mix of white Whole-Wheat Flour, Ground Hazelnut, Mangoes, Ground Flaxseed, Applesauce, dried Goji Berries and other simple ingredients is easier than you can imagine.
Baking without Butter, Milk, Oil or Egg is simple if you have a healthier and perfect substitute. This is one of my best ever homemade fruit Bread that stays fresh for some days without the Refrigerator and the taste remains unbelievably the same like the first day. This Bread has a natural sweet taste and feature a thick crusty exterior just like a Peasant Bread. You can Add extra tablespoons of Applesauce if your Batter is a bit dry to moisten the Batter.

Wondering why I omitted some regular ingredients? Baking this Fruit Bread with Mango puree, Applesauce and Ground Flaxseed instead of oil or Butter adds fibre with natural Sugar and the water content of Applesauce helps to moisten this Bread and keep it longer. This Recipe is easy with the reduced Mango Puree which is the main ingredient for this recipe.
Ingredients:
2 cups All-purpose Flour
1/2 cup white Whole-Wheat Flour
1/2 cup Ground Hazelnut
2 tbsp ground Flaxseed
1/2 tsp Cinnamon
1 tbsp Lemon Zest
4 tbsp Lemon Juice
2 tbsp Baking Powder
1 tsp Cinnamon Extract
1/2 tsp Turmeric
8 tbsp Applesauce
5 tbsp Goji Berries
4 medium Mangoes
Instructions:
Peel and chop 4 fresh ripe medium sized Mangoes.
Blend until smooth with the Blender.
Pour the puree in a Saucepan.
Stir constantly on a Stove at a medium heat.
Stir until reduced and thick.
Allow to to cool completely at room temperature.
Whisk the Flaxseed and Applesauce together.
Stir in the thick reduced Mango puree and other wet ingredients.
Mix and sift the dry ingredient separately.
Combine the mixed dry ingredients with the wet ingredients.
Add more teaspoons of Applesauce if your Batter is too dry.
Grease and line Baking Pan bottom with Parchment Paper (I used 30 cm x 11 cm Spring-form Pan)
Pour Batter into the Pan and even out the Batter.
Bake in a preheated Oven for 35-40 minutes or until the Toothpick inserted into the middle comes out clean.
