Gluten Free + Vegan Homemade Ginger Yeast Bread Recipe




Homemade Bread is unbeatable with pleasant aroma and flavor! This Gingerbread recipe is easy with few ingredients to make two delicious loaves that are super light and fluffy with appealing nice crispy Crust.



INGREDIENTS

  • 4 cups All Purpose Flour or Gluten Free All Purpose Flour

  • 2 1/2 Tsp Active Dry Yeast

  • 1 cup Warm Water (105-115 degrees)

  • 1/2 cup Organic Cane Sugar or Coconut Sugar

  • 1/2 Tsp Salt

  • 1/2 Tsp Ground Cinnamon

  • 2 Tbsp Vegetable Oil

  • 3 Tsp Ground Ginger

  • 1 Tbsp Maple Syrup


Yeast Proofing: Dissolve Yeast with the warm Water. You can add just 1/4 tsp of Maple Syrup at this stage, stir and set it aside for 15 minutes. The mixture should foam up if the Yeast is still alive.


INSTRUCTIONS

  • Combine the dry ingredients in a large Bowl.

  • Pour the wet ingredients into a food processor.

  • Mix the wet ingredients and the combined dry ingredients together until Dough is formed.

  • Knead Dough by hands on a floured surface or with Dough Mat for 10-11 minutes. You can still knead in a mixer for 8-9 minutes until smooth.

First Rise:

  • Preheat your Oven to 350° F

  • Grease a large Bowl with Vegetable Oil and place the Dough inside it.

  • Turn the Dough over to oil the top and cover it with Kitchen Towel or Plastic Wrap.

  • Keep the Bowl inside a warm room until doubled in size. This should take about 2 hours.

  • Grease two Bread Pans with Baking Spray and set aside,

Second Rise:

  • Punch down the Dough after the first rise and divide into two.

  • Form two Bread shapes with the Dough and place them carefully into the Pans

  • Cover the Pans again with Kitchen towel or plastic Wrap.

  • Keep the Pans in a warm room until doubled in size, this can take about 45 minutes.

  • Brush Coconut Milk on the top and bake for 35 minutes or until the top is golden brown.

  • Allow the loaves to cool at room temperature before cutting, this can take up to 6 hours.

STORAGE: Store the Bread in an airtight plastic bag and keep it at room temperature to maintain the freshness for the next 2 days.
