Enriched Vegan Mango-Flax Bread Recipe with No Added Sugar for your Good Health

Fresh Mangoes and Flaxseeds are the main ingredients you need to start making your quick Mango-Flax Bread. This easy to make tasty Homemade enriched Loaf is packed with beneficial Vitamins that will add nutrients to your body.
1/2 cup Flaxseed (Linseed)
3 medium ripe Mangoes
2 cups All Purpose Flour
1/2 cup White Whole Wheat Flour
1/2 cup melted Coconut Oil
1 tbsp Cornstarch
1 tbsp Lemon Zest
1/4 cup Coconut Milk
1/4 tsp Salt
1/4 tsp Ground Cinnamon
1/8 tsp Ginger Powder
Preheat your Oven to 350° F
Peel the Mangoes and chop them for easy blending.
Combine the chopped Mangoes with dates in a Blender to make fresh Mango puree
Blend until smooth and set aside.
Combine and Whisk the Mango Puree together with the wet ingredients.
Mix the dry ingredients in a separate Bowl and combine with the wet ingredients
Whisk together and set aside.
Grease a standard size Loaf Pan and pour Batter into it.
Bake for 40-45 minutes or until Toothpick inserted into the middle comes out clean
Allow to cool for 5 to 6 hours before cutting
