Delicious Banana Crumb Cake For Every Occasion

Looking for a low sugar banana cake recipe for a perfect afternoon tea? This easy banana cake with yummy crispy crumbs is a delicious cake for every occasion. It's one of the most delicious cakes I have ever tasted. If you love bananas, you'll enjoy every slice of this awesome cake!

Ripe or overripe bananas are high in vitamin c and perfect for baking without added sugar for most cakes.


INGREDIENTS (Cake Batter)

  • 2 1/2 cups all purpose flour

  • 1/4 teaspoon salt

  • 4 medium ripe bananas

  • 1/4 cup plant based butter

  • 1/2 cup vegan yogurt

  • 4 tablespoons maple syrup

  • 1 tablespoon lemon zest

  • 1/8 teaspoon turmeric

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons baking powder

Crumble Topping

  • 2 tablespoons mashed bananas

  • 1/2 cup plant based butter

  • 1/8 teaspoon turmeric

  • 2 cups all purpose flour

INSTRUCTIONS

  1. Preheat the oven to 350° F, mash 1/2 of 1 ripe banana and set aside, you need just 2 tablespoons.

  2. In a large bowl, combine flour, turmeric, butter, 2 tablespoons of the mashed banana, mix until combined, add a little flour if the mixture is a bit sticky, mix until crumbs are formed and set aside.

  3. Mash 4 medium ripe bananas again with a fork and in a large bowl mix together the mashed bananas, apple cider vinegar, turmeric, lemon zest, maple syrup, yogurt, butter and set aside.

  4. In a separate bowl, mix the dry ingredients together and add into the wet mixture, whisk them together until smooth but don't over mix.

  5. Grease your cake pan with butter and line the bottom with parchment paper (I used 24 x 24 cm square pan.

  6. Pour batter into the pan and even out the batter. Bake in the preheated oven for 35 - 40 minutes or until a toothpick inserted into the middle comes out clean.

  7. Allow the cake to cool completely at room temperature before serving.

Note: Store the cake in an airtight container and enjoy within 2 days.
