Soak Chia Seeds for at least 8 hours or overnight with the other ingredients
Mash the Banana with freshly squeezed lemon juice. It's necessary for flavor and taste
Whisk the Creamy Coconut Milk until smooth
Combine the ingredients and refrigerate for 6-8 hours or overnight
CHIA PUDDING
2-3 tablespoons Chia Seeds
1 cup canned creamy Coconut Milk
1 medium ripe Banana
1 fresh Lemon
STRAWBERRY COMPOTE
3 cups fresh Strawberries
1/2 cup fresh Lemon Juice or Orange Juice
2 teaspoons Vanilla Extract
2 teaspoons pure Maple Syrup
INSTRUCTIONS
Mash the banana with fork, squeeze directly the lemon juice into the banana puree and mash until smooth.
In a large bowl whisk together the banana puree with the coconut milk.
Add the chia seeds gradually and mix until smooth.
Cover the bowl and refrigerate for 6 to 8 hours preferably overnight.
Chop the strawberries on a cutting board and transfer into a sauce pan, add orange juice and boil over a medium heat, stir and add the remaining strawberry compote ingredients.
Stir over a medium heat for about 10 minutes or until reduced and set the strawberry compote aside to cool.
Stir the chia mixture again after about 8 hours or overnight, pour the chia pudding into glasses and top with the strawberry compote.
Serve immediately for breakfast. #veganfood
