Banana Whole-Wheat Vegan Cake for Celebration

Vegan Powdered Sugar

This type of powdered Sugar is not in every shop and you will spend more to get them even if you buy them online because most recipes will require you to use from 2 to 3 packets and sometimes even more than 3 packets but you can easily make yours at home with pure Organic Cane Sugar.

Simply combine 500g of Organic Powdered Sugar with 2 tbsp of tapioca Starch to make Organic Powdered Sugar at home. Store leftover in an airtight container in a cool dry place,


Vegan Sprinkles

Getting the Sprinkles that is Vegan and colorful for your celebration is not always easy but you can now buy them online and get the best qualities that is cheap and beautiful enough to suit you Occasion.



CAKE INGREDIENTS

  • 4 Tsp Baking Powder

  • 2 cups White Whole Wheat Flour

  • 1/2 Tsp Salt

  • 1 1/2 cups All Purpose Flour

  • 3 medium ripe Bananas (mashed)

  • 1/2 cup Coconut Sugar

  • 1/2 cup unsweetened Applesauce

  • 1/2 cup Vegetable Oil

  • 1 cup unsweetened Organic Soy Milk

  • 2 Tsp Vanilla Extract

  • 1/2 Tsp Ground Nutmeg

BANANA FROSTING

  • 1 fresh Banana (mashed)

  • 2 cups Organic Powdered Sugar

  • 250g Plant Based Butter

  • 2 Tsp Vanilla Extract

INSTRUCTIONS

  1. Preheat the Oven to 350° F

  2. Whisk together the wet ingredients with the Coconut Sugar until smooth and set aside.

  3. In a separate Bowl, mix together the dry ingredients.

  4. Combine the dry ingredients and the wet ingredients together until smooth.

  5. Grease two round Cake Pans (8 and 9 inches) with Vegetable Oil, Plant Based Butter or Baking Spray.

  6. Line the Pans with Parchment Papers.

  7. Pour Batter into the Baking Pans and bake for 35-40 minutes or until the Toothpick inserted into the middle comes out clean (baking time vary)

  8. Allow the Cake to cool completely at room temperature.

  9. Whisk together the ingredients for the frosting until well combined.

  10. Spread the frosting on top of the layers and decorate with Vegan Sprinkles.

  11. Leave the Cake uncovered in the Refrigerator for 20-25 mins to hardened the frosting slightly and put the Cake in a tightly Covered plastic Cake container and place it in the Refrigerator until ready to serve.

  12. Serve and enjoy the Cake within 2-3 days
