Our Best-Ever nutritious Sweet Potato Salad you'll love to taste.

I love eating nourishing Salad and Potato Salad with loads of leafy greens is always my favorite. This sweet Potato Salad is rich and delicious with all the elements of a perfect Salad, the sweetness, crunchy leafy greens and dairy-free Vinaigrette Salad Dressing will surely brighten up your week. The seasoned roasted Potatoes tastes so delicious, You can add your favorite crunchy Veggies, sweet dry Cranberries or Raisins for natural sweetness.


  • 1 large Sweet Potato

  • 1 1/2 tbsp Extra Virgin Olive Oil

  • 1/4 tsp Salt

  • 1/4 tsp Black Pepper

  • 2 cups Baby Spinach-chopped

  • 1/4 cup steamed Cauliflower

  • 1/3 cup dried Cranberries

  • 1 ripe Avocado

  • A handful of Parsley leaves.

  • 1 stick Celery

Vinaigrette Salad Dressing ingredients;

  • 5 tbsp Extra Virgin Olive Oil

  • 1 tbsp Lemon juice

  • 2 tbsp White Wine Vinegar

  • 1 tbsp Dijon Mustard

  • 1/4 tsp Salt

  • 1/4 tsp Black Pepper

  • chopped Parsley


  1. Wash and peel 1 large Sweet Potato.

  2. Slice, dice and season to taste.

  3. Bake in a preheated Oven for 25-30 minutes or until tender and allow to cool completely.

  4. Prepare all the ingredients, wash and chop the leafy greens.

  5. Combine the ingredients in a large Bowl.

  6. Combine the Vinaigrette Dressing ingredients and mix together with the Salad.
