Irresistible Homemade Raspberry Cake with Raspberry frosting Recipe

I love the rich colour and sweet juicy taste of Raspberries. Baking with this delicious fruit packed with vitamins and adding Vanilla flavor to it is simply the best. I baked this Cake with fresh Raspberries and covered it with real Raspberry frosting without food colouring and the taste is amazing.


  • 1 cup whole Milk

  • 3 teaspoons Baking Powder

  • 4 cups All purpose Flour

  • 2 cups fresh Raspberries

  • 1 teaspoon ground Ginger

  • 1/2 teaspoon Salt

  • 2 teaspoons ground Almonds

  • 1 cup unsalted Butter

  • 2 teaspoons Cornstarch

  • 1 cup granulated Sugar

  • 4 large Eggs at room temperature

  • 1 tablespoon Greek natural Yogurt

  • 2 teaspoons Vanilla Extract

Raspberry Frosting:

  • 1 teaspoon Vanilla Extract

  • 4 - 5 cups Confectioners' Sugar (add more or less until desired consistency)

  • 1 tablespoon Meringue powder for more stability (optional)

  • 1/4 cup unsalted Butter

  • 1 cup reduced Raspberry puree

How to make reduced Raspberry puree;

  • Blend fresh Raspberries with the fruit Mixer (you need 2 cups Raspberry puree)

  • Push 2 cups Raspberry puree through a Sieve.

  • Pour the puree in a Sauce Pan.

  • Cook and Stir puree constantly over a low heat until reduced to 1 cup.

  • Allow to cool before using.
