Fresh Vegan Strawberry Cake Recipe - Erdbeertorte


This strawberry cake dessert that is egg free and dairy free is one of my favorites! It's easy and loaded with yummy and healthy fresh strawberries. This German Strawberry Torte or Erdbeertorte is so delicious! Made without butter, it's a fresh cake that is perfect and yummy to share with guests for every special occasion! #strawberrycake

It's simple and delicious for any celebration, party or family gathering.

You can easily make this healthier strawberry dessert cake at home with basic ingredients that you already have in your kitchen and fresh strawberries. So let's get baking! #erdbeertorte


Applesauce Cake Base Ingredients

  • 2 cups of all purpose flour

  • 1 teaspoon of baking powder

  • 1/4 teaspoon of salt

  • 8 tablespoons of unsweetened applesauce

  • 1/2 cup of coconut milk

  • 3 tablespoons of maple syrup

  • 1 teaspoon of Vanilla Extract


FRESH STRAWBERRY FILLING

  • 4 cups of fresh strawberries

  • 2 cups of hand pureed strawberries

  • 2 teaspoons of vanilla extract

  • 3 tablespoons of maple syrup

  • 2 cups of water

  • 3 tablespoons of Agar agar powder


STRAWBERRY TOPPING

Wash fresh strawberries and place them on a cutting board. Use a kitchen knife to cut them in halve. Use them for topping and to beautify your fresh cake dessert. #veganstrawberrycake


INSTRUCTIONS

Cake Batter

Mix the flour, salt and baking powder in a mixing bowl, add maple syrup, vanilla extract, coconut milk with the applesauce and mix until well combined.


Line a 24 cm baking pan bottom with round parchment paper or simply grease the pan with butter.


Bake in a preheated oven for 35 minutes or until a toothpick inserted into the middle comes out clean.


Baking time varies so keep eye on your cake to prevent too much browning. #healthycake


Allow it to cool completely at room temperature.


STRAWBERRY FILLING

  1. Pour water into a large saucepan and add in agar agar powder. Stir continuously over a medium heat for 2 minutes. Add fresh strawberries and stir together for 3 minutes. Reduce the heat and add 2 - 3 cups of hand pureed strawberries. Stir again for 2 minutes and turn off the heat.

  2. Turn the cooled cake upside down and place it in a cake ring.

  3. Scatter diced strawberries on top of the cake. and pour the strawberry filling directly on top of the diced strawberries in the cake.

  4. Arrange the halved strawberries on top of the filling as topping.

  5. Cover and place it in the refrigerator for at least 6 hours before serving.

  6. Put the fresh cake into an air tight cake container and leave it in the fridge until ready to serve,

  7. Enjoy the fresh strawberry cake dessert within 24 hours. #strawberrydessert
