Best Vegan Healthy Cobb Salad Recipe with Avocado Lime Dressing that is fresh and filling



I love this special Cobb Salad that you can enjoy anytime of the year for a nutrient boost. This easy Salad is healthy, delicious and will actually make you love to eat any Cobb Salad that is made without Egg or Meat. I love the Avocado Lime Dressing that tastes so good. It is simply the best Dressing for this Salad. The recipe is easy, I actually made a big Salad Bowl but you can adjust the ingredients to suit you.


Salad ingredients:

  • Small red Onion

  • A Handful of Spinach

  • 1/4 cup white Cabbage

  • 1/2 cup Lettuce

  • 3 Radishes

  • 1 Avocado

  • 1/2 of 1 Carrot

  • 1/4 cup red Cabbage

  • 1/2 of 1 Cucumber

  • 6 Cherry Tomatoes

  • 50g canned Corn

  • 1/4 cup Walnuts

  • 50g cooked canned Chickpeas

  • 1 tbsp Olives


Ingredients for the Avocado Lime Dressing:

  • 1 cup mashed Avocado

  • 2 tbsp Vegan Mayo

  • 2 fresh Limes

  • 1 tsp white wine Vinegar (optional)

  • 1/4 tsp black Pepper

  • 1/4 tsp Salt

  • 1 tbsp Water
