Best Ever Mint Fruit Salad With Lemon Vinaigrette You'll Love To Eat Every Day


I can't just stop making this delicious salad that tastes perfect any time of the day! The recipe is simple and the taste and flavor is so good that you'll love to make it over and over again. This healthy gluten free salad made with a mix of nutritious ingredients is a perfect salad for everyone.

FRESH SALAD INGREDIENTS

1/2 cup diced Strawberries

1 fresh Lemon

1/2 cup diced Pears

1/2 cup diced Pineapple

1 cup diced Apples

1/4 cup chopped Mint Leaves

LEMON VINAIGRETTE DRESSING

1 tablespoon fresh chopped Mint Leaves

1/2 cup Extra Virgin Olive Oil

1/2 cup fresh Lemon Juice

1 tablespoon Maple Syrup

2 teaspoons Yellow Mustard

1/4 tsp Salt


METHOD

Step 1

Wash and chop the mint leaves on a chopping board. In a large bowl combine the ingredients for the lemon vinaigrette together. Whisk the ingredients until combined. Pour mixture into a jar, cover and refrigerate for 15 - 20 minutes.


Step 2

Wash and cut the fresh fruits. Dice and combine them together in a large bowl. Sprinkle juice from 1 fresh lemon on the salad, drizzle half of the lemon dressing and mix until well combined. Drizzle the remaining lemon vinaigrette dressing on top of the salad and serve immediately.
