Cinnamon Rolls made with Coconut tastes even more better! I'm sure of the fact that you can easily bake these beautiful rolls comfortably at home and share with friends. These nutritious homemade Cinnamon Rolls or German Zimtschnecken are so tasty. They tastes so good without a strong taste of Coconut and are made with a mix of All Purpose Flour and Oat Flour with other nutritious ingredients. These Vegan and Gluten free rolls are so much healthier than the traditional store bought Cinnamon Rolls. I love the tender dough and the delicious Coco-Cinnamon filling of these yummy rolls! They tastes absolutely so good and just the perfect satisfying holiday Snacks and delicious treats your family is sure to love.
INGREDIENTS FOR THE DOUGH
4 cups All Purpose Flour or All Purpose Gluten Free Flour
2 1/2 teaspoon Active Dry Yeast
1/2 teaspoon Salt
1/2 cup (125ml) melted Coconut Oil
1 cup warm Coconut Milk (110° F)
1 cup Oat Flour
1/2 cup Maple Syrup
FILLING
3 tbsp Ground Cinnamon
1/4 cup melted Coconut Oil
1/2 cup Coconut Sugar
1 tsp Coconut flakes
1 tbsp of Coconut flakes for topping
INSTRUCTIONS
Dissolve the Yeast with warm Coconut Milk that is about 110 degrees and allow the mixture to sit for 5-10 minutes.
Combine the ingredients for the dough with the Yeast mixture until smooth.
Feel the texture with fingers to be sure, add a teaspoon of Flour if it is sticky or Coconut Milk if it is a bit hard. Always start with just 1 teaspoon at a time until you achieve the desired consistency. The texture should be soft and smooth but not sticking to the fingers.
Grease a large Bowl with Vegetable Oil and put the Dough into the Bowl.
Turn the dough upside down to grease the top just like you would do when baking a Bread.
First Rising
Cover the Bowl and keep it in a warm room for 55 minutes to 1 1/2 hours.
Combine the ingredients for the filling together while waiting for the dough to rise and set aside.
Preheat your Oven to 350° F
Remove Dough from the Bowl after the first rise and roll it out on a floured working surface giving it a rectangular shape.
Brush it with melted Coconut oil and scatter just 1 tablespoon of Coconut Flakes on it.
Spread the Coco-Cinnamon filling on the top and fold it carefully (watch Video)
Cut with dental floss or sharp knife, you should have from 12 to 14 rolls,
Second Rising
Place them into a Baking Tray lined with Parchment Paper.
Cover and keep in a warm room for 20- 25 minutes.
Place the baking tray after the second rise carefully into a preheated Oven and bake for 25 minutes or until golden browned (baking time vary)
Allow to cool completely at room temperature and enjoy
Storage
Put the Cinnamon Rolls in an air tight container,
Put the Container in the Fridge and enjoy the beautiful rolls within 3 days unless you wouldn't mind eating dried out rolls.
