Amazing Healthy Vegan Strawberry Chocolate Cake Recipe


This egg free and dairy free chocolate cake made from scratch is simply the best! This is my favorite recipe for homemade Vegan chocolate cake. It's so easy to make, super moist and packed with delicious strawberries . This cake is deeply moist, sweetened with coconut sugar and filled with sliced strawberries #chocolatecake


INGREDIENTS

3 cups of all purpose flour

2 teaspoons of baking soda

1/2 teaspoon of salt

1/2 cup of coconut sugar

1/2 cup of organic Vegan cocoa powder

1 1/2 cups of unsweetened applesauce

1 cup of lukewarm water

3 teaspoons of vanilla paste

3 teaspoons of apple cider vinegar


Homemade Chocolate Glaze Ingredients

150g of chocolate chips or chopped chocolate

70g of Plant-based butter

1 teaspoon of vanilla extract


TOPPING & FILLING

Fresh strawberries


INSTRUCTIONS

  1. Preheat the oven to 350° F.

  2. In a mixing bowl combine together all-purpose flour, baking powder, cocoa powder, coconut sugar and salt, you can add 1/4 tsp of ground nutmeg or ground cinnamon.

  3. Add applesauce, apple cider vinegar, vanilla paste and lukewarm water to the dry ingredients and mix at a medium speed with an electric mixer until smooth.

  4. Grease 2 medium cake baking pans with butter and line them with parchment papers.

  5. Pour batter into pans and bake them side by side or separately in a preheated oven for 35 - 40 minutes depending on the oven. Insert a toothpick to confirm if cake is ready.

  6. Let chocolate cake cool completely at room temperature.

  7. Pour a store bought or homemade Vegan chocolate glaze on top of one of the cakes and fill it with thinly sliced strawberries.

  8. Place the remaining cake on top of the strawberry filling and sprinkle generous amount of chocolate glaze on the top.

  9. Add strawberries as topping and keep in the refrigerator for 30 minutes before serving.

  10. Enjoy fresh within 24 hours! #veganchocolatecake

How to Make Easy Chocolate Glaze

Melt the chocolate in a microwave for 2 -3 minutes accordingly and stir in butter. Mix the glaze until smooth and use for your cake.
