Amazing Homemade Upside-Down Fruitcake Recipe for every Occasion.

I love the taste of this Homemade Fruitcake that is loaded with healthy fresh and dried Fruits. This Cake is special and so easy to make with few healthy ingredients and is a perfect Cake for afternoon tea. You can add less Sugar because the mixed Fruits has natural sweet taste. This Cake is perfect with the fresh flavor of Lemon.
3 cups white whole-Wheat Flour
3 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 cup (100g) Caster Sugar
170ml Soy Milk
70ml Vegetable Oil
1 teaspoon pure Lemon Extract
1 tablespoon Lemon Zest
1/2 cup fresh Raspberries
1/2 cup fresh Blackberries
1 cup chopped Apples
Apple-Dry fruit Mix
1 tablespoon Raisins
1 tablespoon chopped Hazelnuts
1 tablespoon chopped fresh Apples
Preheat the Oven to 350° F (180°C)
In a Bowl cream the Sugar with Vegetable Oil.
Whisk in Soy Milk and and other wet ingredients,
Mix separately the Flour, baking powder and Salt and combine with the mixed ingredients.
Whisk and add the Fresh-Fruit mix and whisk again until well combined
Grease and flour the Cake Pan.
Spread the Apple-Dry Fruit mix evenly into the bottom of the Cake Pan and pour Batter into the Pan.
Bake for 35 minutes or until wooden stick inserted into the middle comes out clean.
